Yesterday, Rj and I realized something very quickly. It was National Pancake Day!

We discovered this fun fact right before we headed out for a 4.1 mile run around the neighborhood. I had planned to do Tina’s cardio intervals at the gym but when Rj texted me asking if I wanted to run outside, I couldn’t say no. The day was so pretty outside and much more appealing than watching the time tick by on a treadmill.

I know this pace is a lot slower than most runners but oh my gosh, I felt fantastic when I arrived back at our starting point. Believe it or not but that run was the first time I ever successfully ran more than 3 miles. It was tough and I had to mentally talk myself through it but I’ll take it and hope that I only improve. We completed the run in 42 minutes, not including our cool down walk.

National Pancake Day

IHOP was giving away free stacks of pancakes in exchange for donations to the Children’s Miracle Network which is a great program. Rj and I were sweaty, gross, and hungry so we decided to not scare people at IHOP and cook our own pancakes. When we arrived home, I quickly found this yummy looking recipe for Fluffy Pancakes online and proceeded with whipping up some pancakes!

Rj was in charge of the protein/veggie section of dinner and he made what we affectionately call ‘junkyard eggs’. It’s two eggs and two egg whites mixed with whatever vegetables we have on hand. Today it was half a zucchini, mint, spinach, onion, and avocado. The eggs and vegetables were perfectly cooked and very minty!

We devoured our plates and topped it off with a side of fresh blueberries. Yum.

The pancakes were perfectly fluffy and very satisfying. They sat like a rock in my stomach for the rest of the evening. If you’re looking for a batch of normal, fluffy pancakes, I would definitely recommend the Fluffy Pancake recipe. The next time I make it, I plan to experiment with making it a little bit healthier but it’s delicious just the way it is.

    Aw, pancakes are the best and National Pancake Day totally crept up on me haha. Normally I’m on it! Glad you got to partake!

      It crept up on us too! I heard there may or may not be another pancake day coming up? People just love pancakes too much to have only one day for them a year.
